Event Description

Gather around the butcher’s block to learn everything you’ve ever wanted to know about breaking down chickens at home.

Build your confidence in the kitchen with the fundamentals that every home chef needs. Buying whole chickens can save you money and allow you the flexibility to break down your bird in a way that’s perfect for your recipe.

This is a hands-on class! Starting with a knife skills portion where participants will learn some classic cuts and prepare a mirepoix.

Then participants will be given a whole chicken. We’ll discuss the many options for breaking it down and participants will learn to truss, spatchcock, and cut a bird into eight pieces. We’ll also talk cooking techniques and ideas for utilizing the entire bird- bones, offal, and all.
