Chopped Cheese, Pickled Pepper Horseradish Creme

Serves 6

2 pounds (80/20 blend) ground beef

2 tablespoons high heat oil, e.g. canola

2 teaspoons Adobo seasoning

2 cups white onion, chopped

3 tablespoons garlic, minced

2 tablespoons Worcestershire sauce

6 (8 inch) hero rolls, hinge cut

6 tablespoons unsalted butter

12 slices American cheese

Kosher salt & fresh cracked pepper

For serving:

Pickled Pepper Horseradish Creme

Ketchup

Shredded iceberg lettuce

Sliced tomato

1. In a large skillet set over medium heat, add 2 tablespoons of butter and place 2 hero rolls cut side down. Toast until golden brown. Repeat with the other hero rolls. Wipe out the skillet with a wad of paper towels.

2. Place the large skillet over medium high heat, add canola oil, and when the oil is shimmering and slightly smoking, add ground beef. Sprinkle adobo seasoning on the beef and when the beef is brown and a crust forms, flip the beef over to the other side.

3. Add onions and cook until they soften, about 3 minutes.

4. Add garlic, cook until fragrant, about 1 minute, and add worcestershire sauce. Turn the heat down to low.

5. Lay american cheese over the meat mixture and, using a high heat rubber spatula, chop and mix the cheese into the meat.

6. Dress a hero roll with pickled pepper horseradish creme on one side, ketchup on the other. Add ⅙ of the meat mixture onto the bottom bun, lay tomatoes on top and add shredded iceberg lettuce. Enjoy!

Pickled Pepper Horseradish Creme

¼ cup chopped pickled jalapenos

¼ cup chopped pickled banana peppers

2 tablespoons prepared horseradish

1 cup mayonnaise

⅓ cup sour cream

1 tablespoon honey

Kosher salt & fresh cracked pepper

1. Combine all ingredients in a mixing bowl, stir thoroughly. Taste and season with salt and pepper.
