Seared Scallops, Green Goddess, Avocado Salad
Serves 4
1 to 1 1/4 pounds dry sea scallops, approximately 16
2 teaspoons olive oil
2 teaspoons unsalted butter
Kosher salt & Freshly ground black pepper
- Add the oil to a large skillet on high heat. Salt and pepper the scallops. Once the oil begins to smoke, gently add the scallops season side down, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on the first side. Flip the scallops, add the butter, and baste until the butter is brown and foamy. Remove the scallops and serve.
Green Goddess
1 cup Greek yogurt
1 cup sour cream
1 anchovy filet
2 tbsp white wine vinegar
½ cup chopped tarragon
½ cup chopped chives
½ cup chopped parsley
1 clove garlic, minced
Zest of 1 lemon
Kosher Salt & Fresh cracked pepper
- In a blender, add all ingredients, puree until smooth. Taste and adjust with salt, pepper and vinegar.
Avocado Salad
2 ripe avocados, peeled and diced
1 cup cherry tomatoes, halved
½ cup red onion, julienned
½ cup cucumber, thinly sliced
½ cup baby watercress
¼ cup pomegranate seeds
Kosher salt & Fresh cracked pepper
- Combine all ingredients in a large mixing bowl, season with salt and pepper, toss to combine.
